Homemade Lemon Curd

Lemon curd is a versatile topping, perfect with warm gingerbread, pound cake, muffins, or any number of sweet treats.

Lemon Curd
Hands-on time: 10 min. Total time: 1 hr. 10 min.
For a lime variation, substitute lime rind and juice for the lemon rind and juice.

Ingredients
• 3/4 cup sugar
• 1 tablespoon grated lemon rind
• 2 large eggs
• 2/3 cup fresh lemon juice (about 3 large lemons)
• 2 tablespoons butter

Directions
1. Combine first 3 ingredients in a medium saucepan over medium heat, stirring with a whisk. Cook until sugar dissolves and mixture is light in color (about 3 minutes). Stir in lemon juice and butter; cook 5 minutes or until mixture thinly coats the back of a spoon, stirring constantly with a whisk. Cool. Cover and chill 1 hour (the mixture will thicken as it cools).

Note: This recipe yields 1 1/3 cups of lemon curd. It can be stored in an airtight container in the refrigerator for up to 1 month. You can easily double the recipe, and freeze half of it in a heavy-duty zip-top plastic bag for up to 6 months. Thaw in the refrigerator, and use within 1 month.

As gardening season is fast approaching, this tip just may work. It’s worth a try and you don’t have to be an expert painter, the birds won’t know the difference. Hey, if it doesn’t discourage birds, your garden is certainly colorful.

You’ll make more money if you do some research first by browsing thrift shops and yard sales in your area. (Prices vary widely by region.) But if your main goal is to get rid of as much stuff as possible with some compensation for your time and effort, follow these pricing guidelines from the pros.

Hardcover books: $1 (paperbacks, two for $1)

CDs and DVDs: $1

Mainstream brand-name clothing: $5 to $15

T-shirts: two for $1

Shoes: $5 to $10

Costume jewelry: $1 (or $5 for a few items)

Coffee tables: $50 to $100

Dining chairs: $25 to $150 each

Dishes and glasses: $5 to $30 for an eightpiece set

China: $1 to $10 a plate

SAD DAY IN THE ENTERTAINMENT INDUSTRY IN SASKATOON: Mike Simmonds, a man who advocated for better services and treatment for the blind in Saskatchewan has died. He passed away of a blood clot Monday night April 25 in Saskatoon. Simmonds, a comedian, had a deep sense of humor, loved music and had audiences in the palm of his hand immediately upon stepping on stage.

JOKE OF THE DAY: Don’t wear headphones while vacuuming. I’ve just finished the whole house before realizing the vacuum wasn’t plugged in.

Lemon Brownies

Prep Time: 5 min   Cook Time: 25 min   Total Time: 30 min
Ingredients
3/4 C flour
3/4 C sugar
1/4 tsp salt
1/2 cup butter, softened
2 eggs
1 Tbs fresh lemon juice
1 tsp lemon zest
Glaze
1/2 cup powdered sugar
1 Tbs lemon juice
Instructions
Preheat oven to 350°.
In a large bowl, combine flour, sugar and salt
Mix in the softened butter.
In another bowl whisk the eggs with the lemon juice and zest.
Come wet and dry ingredients, and mix well. Pour into an 8×8 greased pan, and bake for 25 minutes.
Remove from oven and allow to cool before topping with glaze.
For the glaze, whisk together powdered sugar and lemon juice.

While it’s easy to fall into a rut and cook the same thing over and over again, we really try to push ourselves when it comes to coming up with new and flavorful recipes that keep us from getting tired of any one thing: in this case, chicken. We make it all the time, but this balsamic vinegar reduction and the perfectly sauteed veggies make this chicken dish a new favorite….it’s got a rich flavor and it’s perfect at any time of year!
VINEGAR-BRAISED CHICKEN AND MUSHROOMS
Serves 6

Ingredients

4 pounds assorted bone-in, skin on chicken pieces (breasts and thighs)
2 pounds mushrooms (cremini, white, or baby bella), cleaned of any dirt or particles
2 cups low-sodium chicken broth
3/4 cup balsamic vinegar
1/4 cup red wine vinegar
1/4 cup apple cider vinegar
5 carrots, peeled and roughly chopped (could use baby carrots)
3 cloves garlic, crushed
1 yellow onion, chopped
1 bay leaf
3 tablespoons extra-virgin olive oil
2 tablespoons all-purpose flour
kosher salt and freshly ground pepper, to taste
Directions

Season both sides of chicken generously with salt and pepper.
Heat olive oil in a large cast-iron skillet or Dutch oven over medium-high heat and, in batches, brown chicken on all sides, then transfer to a separate plate and set aside.
Reserving 2-3 tablespoons, drain off fat and saute carrots and onions until tender. About 10 minutes.
Add mushrooms and cook for another 6-8 minutes, or until softened, then add crushed garlic and saute for 2 minutes.
Season everything with salt and pepper, then transfer vegetables (discarding garlic) to the plate with the chicken.
Sprinkle flour into the Dutch oven and cook for 1-2 minutes, whisking continuously, until pasty and smooth.
Pour in the vinegars and whisk until smooth. Cook mixture for 3-5 minutes, or until thickened and reduced, then slowly mix in chicken broth.
Return chicken to pot and add bay leaf, then bring mixture to a boil.
Reduce heat to low, partially cover your pot and let simmer for 35-40 minutes, or until chicken is cooked through.
Return vegetables to Dutch oven and serve with reduced sauce.

Gardening Tip Before You Plant

Fruit Dipped Cones

Dip the cones in melted dark chocolate, fill with fruits of your choice. Serve with vanilla greek yogurt for dipping.

Sweet’ish Meatballs

1 jar of chili sauce
1 jar of grape jelly
1 package of Italian style meatballs

In a large pot, pour the meatballs, chili sauce and grape jelly altogether on medium heat and cook until done! Serve over rice. Easy as 123
