Chicken Adobo – Slow Cooker

Haven’t tried this one yet but it looks east enough and seems tasty.

Prep Time: 10 mins
Cook Time : 6 hrs 30 mins
Total Time: 6 hrs 40 mins
Servings 4
1 teaspoon olive oil
2 shallots, minced
6 cloves garlic, minced
3 tablespoons brown sugar
½ teaspoon freshly ground black pepper
¼ teaspoon ground cayenne pepper
2 bay leaves
½ cup chicken stock (I used Knorr Homestyle Stock)
⅓ cup low-sodium soy sauce
¼ cup apple cider vinegar
2 pounds chicken thighs and/or drumsticks, excess fat removed

Rub the olive oil around the inside of your slow cooker. Mince your shallots and garlic and add them to the pot, along with your brown sugar, black pepper, cayenne pepper, and bay leaves.
Pour your chicken stock, soy sauce, and apple cider vinegar into the pot. Clean any excess fat from your chicken; this more goes for thighs than it does drumsticks, but you don’t want too much fat sitting in the pot while you chicken cooks. Add them to the pot, and pour some of the sauce on top of the chicken so it’s coated. Set your slow cooker to low and let it cook for 6 hours (if you want to double this recipe, put it on low for 8-10 hours).
When your chicken is ready, remove it from the pan. Now, your chicken will be delicious as it is with a little of the sauce poured on top, but you can always take it up a notch by doing the following.
Set the chicken on a lined baking sheet (on top of a cooling rack in a lined baking sheet, if you have one, but it’s not completely necessary). Strain the sauce into a pot, so that you remove the shallots, garlic, and bay leaves from the liquid, and place the pot over medium-high heat. Cook the sauce, stirring frequently, for 8-10 minutes, until reduced to about half.
While you reduce your sauce, preheat your oven to broil. When your sauce has reduced, brush the chicken with it and broil for 1-2 minutes, until slightly charred and crispy. Serve alongside some rice, bread, or steamed vegetables.

You’re Feeling Motion Sickness, Here’s 5 Things You Can Do to Relieve it

Everyone has dealt with motion sickness. Whether it’s your first time on a moving boat, your 10th time in a flying plane, or your 100th time in a moving vehicle, you’re always at risk of having motion sickness.
A loss of your center of gravity that may lead you to feel sick and have the need to vomit. Yes, there are medications such as Dramamine that can relieve you of motion sickness, but what if you forget to bring it with you? Does that mean that it is inevitable that you will deal with motion sickness? Not necessarily.

Here are 5 ways to relieve motion sickness on your own!

1)  Focus on a fixed point, like the horizon. While everything is moving around you, it is best to focus on something that is not moving, like any fixed point. While you’re in a car, boat, or plane, it is good to look into the horizon. The horizon never moves nor changes direction, so by staring right at it, you feel less like you are actually moving. This is a great way to relieve motion sickness.

2) Do NOT read or look down at your phone. If you look at something stationary, such as book or cell phone, or even the bottom of your feet while looking down, that could cause motion sickness. This is because while you are looking at something not moving, your ears are hearing either the sounds of a moving car, or waves near a moving boat, which throws off your equilibrium. Avoid this!

3) Breath consistently and control your breathing. By focusing on your breathing, making sure to inhale fully, then exhale fully, you will take in good amounts of oxygen into your body. This will reduce the feeling of nausea in your stomach, and ultimately reduce the feelings of motion sickness.

4) Drink a good amount of water. It is best to drink a good amount of water, not an excessive amount of water. Drinking water consistently throughout your trip will keep you hydrated, which is a necessity in order to not have motion sickness. Dehydration is a main factor in motion sickness.

5) Have a taste of ginger in any form available. You can have ginger in my forms, such as by eating a ginger cookie or adding a tablespoon of ginger to a cup of tea. All these ways will help reduce many of the symptoms of motion sickness, and help you avoid drowsiness. Ginger contains both gingerols and shogaols, which help relieve nausea by relaxing your intestines.

This photo appeared on a DIY (whole room) makeover somewhere on the internet and as stunning as that end result was, this toilet tank display was so sweet. Toilet tanks are small so they tend to get neglected as a decor feature, most end up with a sad box of tissues that change every time the tissues run out. With a little imagination and some second-hand store finds, this toilet tank ended up a showpiece. Who didn’t have one of these brass plant misters in the 70’s or 80’s? There are thousands still kicking around everywhere. Failing that, there are some great incense burners instead. Look in GOOGLE or Pinterest for things to do with milk glass. This vase is home to a sprig of eucalyptus but you could change it out for pussy willows. We sell the mini finger cactus at Charter House, however, any small succulent would do. It is all a matter of finding the right ‘scale’ for your display. For a simple change in your display, tie a bow around the milk glass vase in seasonal colors. Easy.

Most People Cook With The Wrong Onions
With all the different types of onions out there, it’s hard to know what’s what! Picking out the wrong type of onion could be the difference between a masterpiece of a meal, and a complete nightmare. Use this helpful guideline.

Yellow Onion: Pros: Low cost and available all year round. Cons: None Cooking Uses: These onions are great for just about anything. From soups to salad, and everything in between – yellow onions taste great! However, these are the type of onions you’ll want to use for caramelizing since they’re high in sugar.

Red Onion: Pros: Strong spicy taste if eaten raw. Cons: Not great for caramelizing or long cooking times. Cooking Uses: These are wonderful for topping salads and grilling! Red onions also taste fantastic on burgers and sandwiches – anytime you can eat onions raw, this is the type to do it with!

Sweet Onion: Pros: Mild taste when consumed raw and goes great with many types of recipes. Cons: Shorter shelf life. Cooking Uses: Great for a variety of recipes (especially when used in slow cookers). The sweet taste is delicious raw or cooked and pairs well with items like tomatoes and potatoes!

White Onion: Pros: Sharp flavor and very versatile when used in cooking. Cons: Thin skin and powerful impact on eyes when chopping. Cooking Uses: White onions are a staple in Latin cooking! Throw them in a salsa, guacamole, tacos, or whatever else your heart desires. The strong raw taste is best when offset by other more gentle flavors! They also work as a great pizza topping!

Bonus: Shallot: Pros: Mild taste and a hint of garlic. Cons: Expensive! Cooking Uses: Use as a side for fancier meals and feasts – or sliced thinly in Asian-style cuisine! They are also great as a side dish for a Christmas Eve pot roast, or can work well when paired with a Thanksgiving turkey!

Parmesan Crusted Zucchini

This is way too early in the year to be talking about all the excess zucchinis people grow in their gardens but dump on their friends. If you are one of the recipients of unwanted zucchinis, here is a recipe the sounds quite tasty.

3-4 medium zucchinis
½ cup grated Parmesan cheese
olive oil
salt & pepper
{reheat oven to 350
Cut the zucchinis in quarters, length-wise. Set aside.
Line a baking sheet with foil.
Place zucchinis on the baking sheet and drizzle with olive oil.
Sprinkle on grated Parmesan cheese (and any other spices desired).
Top with a little bit of salt and pepper.
Bake for 12-14 minutes.
Broil for the last 2 minutes until the cheese is more browned.

SAD TRIP DOWN MUSICAL MEMORY LANE: 2nd March 2008, Canadian guitarist, singer, Jeff Healey, died of cancer. Healey lost his sight to retinoblastoma, a rare cancer of the eyes when he was 8 months old, resulting in his eyes being surgically removed. After living cancer-free for 38 years, he developed sarcoma in his legs. Despite surgery for this, the sarcoma spread to his lungs and ultimately was the cause of his death. Healey released over 12 albums, presented a long running radio show and worked with many artists including; Stevie Ray Vaughan, Buddy Guy, B.B. King, ZZ Top & Eric Clapton.

Wearing o’ Green Cake Recipe

Wearing o’ Green Cake. It may be a bit early to be thinking about a St. Patty’s Day cake but why wait for all the green sprinkles, food coloring, Jell-o and Napkins etc. to be sold out. At least, round up the ingredients for this fun idea.

One bite of this moist, colorful cake and you’ll think you’ve found the pot o’ gold at the end of the rainbow. It’s the perfect dessert to round out your St. Patrick’s Day feast.
TOTAL TIME: Prep: 25 min. Bake: 30 min. + cooling MAKES: 12-15 servings
1 package white cake mix (regular size)
2 packages (3 ounces each) lime gelatin
1 cup boiling water
1/2 cup cold water
1 cup cold milk
1 package (3.4 ounces) instant vanilla pudding mix
1 carton (8 ounces) frozen whipped topping, thawed
Green sprinkles

Prepare and bake cake according to package directions, using a greased 13×9-in. baking dish. Cool on a wire rack 1 hour. In a small bowl, dissolve gelatin in boiling water; stir in cold water and set aside.
With a meat fork or wooden skewer, poke holes about 2 in. apart into cooled cake. Slowly pour gelatin over cake. Cover and refrigerate.
In a large bowl, whisk milk and pudding mix 2 minutes (mixture will be thick). Fold in whipped topping. Spread over cake. Decorate with sprinkles. Cover and refrigerate until serving. Yield: 12-15 servings.
