Fun Chocolate Graduation Caps To Make

With all the grads and parties happening, here is a cute idea to make. It doesn’t require a lot of kitchen-type skills either.

Chocolate Graduation Caps

Reese’s Peanut Butter cups (mini)
After 8 Mints or Ghiradelli Chocolate Squares ( two bags total of 18)
Icing in coordinated color of your choice
Air Heads sour candy strips (you can use licorice also) for tassel.
M&M candies

Remove wrappers of chocolates
Place a small dot of icing in center, on the side of chocolate that has design.
Place Reese’s cup on top of icing and let dry
when dry…turn them over and apply a small dot of icing and adhere the Airhead tassel add another small dot and add M&M!!

Hot dogs
A paring knife
Mustard or ketchup

1. Using your paring knife, cut your hot dog lengthwise until you get about 2/3 of the way down.
2. Slice each side of the split lengthwise to create the look of tentacles.
3. Microwave the hot dog for 45 seconds, and voila! All you need to do is prop your octo-dog up with a toothpick and paint a happy face on him with ketchup and mustard.

Bonus: if you want to make your octo-dog really shine, just cook some 3 minute ramen on the stove and add a dash or two of green coloring. Now you’ve got a bowl of “seaweed” for your octo-dog to sit on! Or cook small seashell noodles and use your favorite mac and cheese recipe.

Macaroni Coleslaw – 16 Scrumptious Servings

This recipe was sent to me by a friend. I needed a large salad recipe to have for a family gathering and this is really good.

1 package (7 ounces) ring macaroni
1 package (14 ounces) coleslaw mix
2 medium onions, finely chopped
2 celery ribs, finely chopped
1 medium cucumber, finely chopped
1 medium green pepper, finely chopped
1 can (8 ounces) whole water chestnuts, drained and chopped
1-1/2 cups Miracle Whip Light
1/3 cup sugar
1/4 cup cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Cook macaroni according to package directions; drain and rinse in cold water. Transfer to a large bowl; add the coleslaw mix, onions, celery, cucumber, green pepper and water chestnuts.
In a small bowl, whisk the dressing ingredients. Pour over salad; toss to coat. Cover and refrigerate for at least 1 hour. Yield: 16 servings (3/4 cup each).

Sloppy Joe’s Stuffed Peppers

Use this simple trick to keep your filling in the peppers and not all over the baking pan. Buy peppers the size you know that will fit in a muffin tin. No spilling. This recipe came to me in one of those internet recipe exchanges. Sounds delicious.

Sloppy Joe’s Stuffed Peppers


4 Bell Peppers (any color you choose)
2 lbs Ground Beef
1 Small Onion (chopped)
3/4 cup of chopped carrots
3/4 cup of chopped celery
1tsp minced garlic
8 oz can of mild (any flavor) diced tomatoes
1/3 cup of beef broth
1/4 cup of reduced sugar ketchup
2 tbsps of tomato paste
1 tbsp. of Worcestershire sauce
1 tsp. mustard
1 tbsp of chili powder
1tsp cumin
1tsp salt

Preheat your oven to 350 degrees
Wash your peppers and cut the tops off..clean seeds out….
Grease your pan and then salt and pepper your peppers ….bake for 35 min.

Over Med heat…cook your ground beef, onion, carrots, celery, and garlic.

If you have grease drain it.
Then add the diced tomatoes, beef broth, ketchup, tomato paste, Worcestershire sauce,mustard, chili powder, cumin, and salt…… Mix all well and simmer for 10 min.
Remove your peppers from the oven… stuff with mixture

GARDENING TIP OF THE DAY: Eat or scoop fruit out of lemon, orange or grapefruit halves to start your seedlings. Fill with soil and seeds or seedlings. Plant the entire bowl into the ground and the peels will compost directly into the soil to nourish the plants as they grow.

Homemade Lemon Curd – Easier Than You’d Think

Homemade Lemon Curd

Lemon curd is a versatile topping, perfect with warm gingerbread, pound cake, muffins, or any number of sweet treats.

Lemon Curd
Hands-on time: 10 min. Total time: 1 hr. 10 min.
For a lime variation, substitute lime rind and juice for the lemon rind and juice.

• 3/4 cup sugar
• 1 tablespoon grated lemon rind
• 2 large eggs
• 2/3 cup fresh lemon juice (about 3 large lemons)
• 2 tablespoons butter

1. Combine first 3 ingredients in a medium saucepan over medium heat, stirring with a whisk. Cook until sugar dissolves and mixture is light in color (about 3 minutes). Stir in lemon juice and butter; cook 5 minutes or until mixture thinly coats the back of a spoon, stirring constantly with a whisk. Cool. Cover and chill 1 hour (the mixture will thicken as it cools).

Note: This recipe yields 1 1/3 cups of lemon curd. It can be stored in an airtight container in the refrigerator for up to 1 month. You can easily double the recipe, and freeze half of it in a heavy-duty zip-top plastic bag for up to 6 months. Thaw in the refrigerator, and use within 1 month.

Lemon Brownies – These Are really Good

Lemon Brownies

Prep Time: 5 min   Cook Time: 25 min   Total Time: 30 min
3/4 C flour
3/4 C sugar
1/4 tsp salt
1/2 cup butter, softened
2 eggs
1 Tbs fresh lemon juice
1 tsp lemon zest
1/2 cup powdered sugar
1 Tbs lemon juice
Preheat oven to 350°.
In a large bowl, combine flour, sugar and salt
Mix in the softened butter.
In another bowl whisk the eggs with the lemon juice and zest.
Come wet and dry ingredients, and mix well. Pour into an 8×8 greased pan, and bake for 25 minutes.
Remove from oven and allow to cool before topping with glaze.
For the glaze, whisk together powdered sugar and lemon juice.

Vinegar-Braised Chicken And Mushrooms

While it’s easy to fall into a rut and cook the same thing over and over again, we really try to push ourselves when it comes to coming up with new and flavorful recipes that keep us from getting tired of any one thing: in this case, chicken. We make it all the time, but this balsamic vinegar reduction and the perfectly sauteed veggies make this chicken dish a new favorite….it’s got a rich flavor and it’s perfect at any time of year!
Serves 6


4 pounds assorted bone-in, skin on chicken pieces (breasts and thighs)
2 pounds mushrooms (cremini, white, or baby bella), cleaned of any dirt or particles
2 cups low-sodium chicken broth
3/4 cup balsamic vinegar
1/4 cup red wine vinegar
1/4 cup apple cider vinegar
5 carrots, peeled and roughly chopped (could use baby carrots)
3 cloves garlic, crushed
1 yellow onion, chopped
1 bay leaf
3 tablespoons extra-virgin olive oil
2 tablespoons all-purpose flour
kosher salt and freshly ground pepper, to taste

Season both sides of chicken generously with salt and pepper.
Heat olive oil in a large cast-iron skillet or Dutch oven over medium-high heat and, in batches, brown chicken on all sides, then transfer to a separate plate and set aside.
Reserving 2-3 tablespoons, drain off fat and saute carrots and onions until tender. About 10 minutes.
Add mushrooms and cook for another 6-8 minutes, or until softened, then add crushed garlic and saute for 2 minutes.
Season everything with salt and pepper, then transfer vegetables (discarding garlic) to the plate with the chicken.
Sprinkle flour into the Dutch oven and cook for 1-2 minutes, whisking continuously, until pasty and smooth.
Pour in the vinegars and whisk until smooth. Cook mixture for 3-5 minutes, or until thickened and reduced, then slowly mix in chicken broth.
Return chicken to pot and add bay leaf, then bring mixture to a boil.
Reduce heat to low, partially cover your pot and let simmer for 35-40 minutes, or until chicken is cooked through.
Return vegetables to Dutch oven and serve with reduced sauce.

In a large pot, pour the meatballs, chili sauce and grape jelly altogether on medium heat and cook until done! Serve over rice. Easy as 123

Fajita Stuffed Chicken – Mid-Week Meal In No Time

Fajita Stuffed Chicken. Found this recipe on Facebook as a YouTube video. It looks so tasty and easy to prepare. Excellent for a mid-week meal-in-a-hurry.


  • 2 tablespoons canola oil
  • 1 red pepper, diced
    1 green pepper, diced
    1 yellow pepper, diced
    1 onion, diced
    1 teaspoon Kosher salt
    1 teaspoon freshly ground black pepper
    4 ounces cream cheese
    ½ cup shredded cheddar cheese
    ½ cup diced pepper jack cheese
    3 boneless skinless chicken breasts
    2 teaspoons salt
    2 teaspoons chili powder
    2 teaspoons cumin
    2 teaspoons garlic powder
    3 tablespoons canola oil
    Salsa, sour cream, and guacamole for serving

Heat the canola oil in a pan over high heat. Cook the peppers, onion, salt, and pepper until soft and slightly caramelized. Transfer the cooked veggies to a bowl.
In the same bowl, mix in the cream cheese, cheddar, and pepper jack, stirring until evenly incorporated. Set aside.

In a separate bowl, combine the chicken with the salt, chili powder, cumin, and garlic powder, evenly distributing the spices over the chicken.

On a cutting board, slice a pocket in the chicken horizontally and fill the pocket with a heaping spoonful of the veggie mixture. Press the edges of the chicken together to seal in the filling. Repeat with the remaining chicken.

Heat the canola oil in a pan over medium heat. Cook the stuffed chicken for five minutes on each side, until cheese is melted and chicken is cooked through.
Serve with salsa, sour cream, and guacamole!

Make A Roux For Gravies And Sauces

Use this simple method for making a roux. The longer you cook roux constantly stirring, the darker it gets, releasing a rich and nutty flavor. Use a blond roux for fish, chicken and cream stocks…copper roux for pork and brown roux for beef and hearty stews.

Use 1-2 Tablespoons of prepared roux to 4 cups of liquid (beef, chicken or vegetable stock). Freeze roux in ice cube trays, then put into freezer bags and use as needed.

  • YIELD: 1 Cup of sauceThin White Sauce
  • 1 tablespoon butter or 1 tablespoon margarine
    1⁄2-1 tablespoon flour
    1⁄4 teaspoon salt
    1⁄8 teaspoon pepper
    1 cup milk
  • Medium White Sauce
  • 2 tablespoons butter or 2 tablespoons margarine
    2 tablespoons flour
    1⁄4 teaspoon salt
    1⁄8 teaspoon pepper
    1 cup milk
  • Thick White Sauce
  • 1⁄4 cup butter or 1⁄4 cup margarine
    1⁄4 cup flour
    1⁄4 teaspoon salt
    1⁄8 teaspoon pepper
    1 cup milk

Melt butter in saucepan over low heat.
Blend in flour,salt,pepper.
Cook over low heat,stirring until mixture is smooth and bubbly.
Remove from heat.
Stir in milk.
Heat to boiling, stirring constanty.
Boil and stir 1 minute.
Each sauce make one cup.

This white sauce can be used in so many different ways. Add Cheese, Curry Powder, Dill, or Horseradish. Add canned Tuna, Ham, Hamburger,Sausage. Lots of things can be done with this Roux.
